Can you tell the file was compressed to 500 KB?
In text documents, hardly at all. In scans with photos it may show when you zoom in, but on screen it usually looks fine. Compare the before and after before downloading.
Can I choose a different compression level?
Yes. The target takes priority, but you can turn off “Fit to a size” and choose Low, Recommended, Extreme, or Maximum depending on how much you want to shrink.

500 KB is a reasonable target for attaching documents to an email or uploading them to a platform, even if they have several pages with an image or two. The tool looks for the best quality that fits in that size.
Check the result
When it finishes you will see the original size, the final size, and the savings. If the PDF already weighed less than 500 KB, it does not make it worse: you get it back as it was. For a smaller limit try compress to 200 KB or open the compress PDF tool.
